Is there any dish more comforting than a good ol’ sausage casserole?! The slow cooker is out & I’m ready to make a cheap & cheerful (but oh so yummy) dinner.
Ingredients & Prices:
- 12 x Sausages (any variety) Richmond £3
- 300ml Chicken Stock (I use cubes) 19p
- 1 x tin of chopped tomatoes 31p
- 1 x tin of baked beans 56p
- Handful of mushrooms 45p
- 1 x onion 16p
- 1 tsp paprika 4p
- 2 x cloves of garlic 7p
- 1 tsp dried mixed herbs 4p
- Salt & pepper
- Crusty Bread as a side 95p
TOTAL: £5.77 for a family of 4 / £1.44 per portion
I always fry my sausages first. I don’t care what anyone says – there is nothing worse than tucking in to a grey sausage! I like a bit of browning & I think it adds to the flavour. I don’t cook them all through, just a high heat, enough to give them some colour.
Next I chop the onion, garlic & mushrooms (VERY fine so my kids don’t notice)
Then I pour in the liquidy ingredients; chopped tomatoes, chicken stock & baked beans.
To this, I add the paprika, herbs & salt/pepper.
Once the sausages are suitably browned, I chop them up & chuck them in. I find they go further if you cut them into chunky pieces first.
Then I stir the concoction, whack on the low setting for 4-5 hours – and voila! A delicious, hearty, Autumn feast for the family! Even nicer if you add crusty bread 😋
